Bran Muffins

Ingredients
  • cups wheat bran flake cereal with raisins

  • 1 1/2  cups all-purpose flour

  • cup whole wheat flour

  • 1 1/2  teaspoons baking soda

  • 1/2  cup sugar

  • 1/2  cup light brown sugar

  • cups buttermilk

  • 1/4  cup canola oil

  • large eggs

Instructions
  1. In a large bowl, combine cereal, all-purpose flour, wheat flour, baking soda, sugar and brown sugar.  In another bowl, mix buttermilk, oil and eggs; add to the dry ingredients, stirring just until moistened.  Cover and refrigerate (dough is best if chilled).
  2. Preheat oven to 400F.
  3. Spoon batter into muffin tins coated with nonstick cooking spray, filling about three-fourths full.  Bake 15 to 17 minutes or until golden.
