Bran Muffins
The perfect healthy make-ahead muffin.
Ingredients

4 cups wheat bran flake cereal with raisins

1 1/2 cups all-purpose flour

1 cup whole wheat flour

1 1/2 teaspoons baking soda

1/2 cup sugar

1/2 cup light brown sugar

2 cups buttermilk

1/4 cup canola oil

2 large eggs
Instructions
- In a large bowl, combine cereal, all-purpose flour, wheat flour, baking soda, sugar and brown sugar. In another bowl, mix buttermilk, oil and eggs; add to the dry ingredients, stirring just until moistened. Cover and refrigerate (dough is best if chilled).
- Preheat oven to 400F.
- Spoon batter into muffin tins coated with nonstick cooking spray, filling about three-fourths full. Bake 15 to 17 minutes or until golden.
