Ingredients (9)

  • 1 cup Chopped Cooked Chicken
  • 2 T Chopped Celery
  • 2 T Blue Cheese Crumbles
  • 2 T Light Mayonnaise
  • or 2 T Low Fat, Plain Greek Yogurt
  • 2 T Hot Sauce
  • 1 T Chopped Chives
  • 32 Lettuce Cups
  • 32 TRISCUIT Crackers
  • 1 Coca-Cola® Orange Vanilla Zero Sugar, 20oz Bottle

Directions

  1. Combine chicken, celery, cheese, mayonnaise, hot sauce and 2 tsp chives.
  2. Top crackers with lettuce and chicken mixture.
  3. Sprinkle with remaining chives.

Prepare using Bibb, Boston or curly leaf lettuce; or baby spinach leaves.

Note
This is a great way to use leftover cooked chicken. Or, you can instead use chopped meat from a rotisserie chicken. Or if you have fresh uncooked chicken breasts on hand, you will need to cook 1 small chicken breast to get the 1 cup chopped cooked chicken needed to prepare this recipe.

Substitute
Substitute plain low-fat Greek-style yogurt for the mayonnaise.
