Radish & Watermelon Arugula Salad
Ingredients (10)
- 2 tbsp of red wine vinegar
- 2 tbsp of fresh mint (leaves torn)
- 5 oz of baby arugula
- 1/4 cup of olive oil
- 1 small of seedless watermelon (diced, about 3 1/2–4 cups)
- 1/2 small of Vidalia onion (thinly sliced)
- 1 bunch of radish (cut away stems and thinly sliced)
- 2 oz of feta cheese (crumbled)
- 1/8 tsp of black pepper
- 1/4 tsp of salt
