- 1 kosher salt, to taste
- 1 hot chili seeded and minced, such as a Scotch bonnet, serrano, or jalapeño
- 1 tbsp olive oil
- 1 tsp fresh thyme minced
- 2 cup whole-wheat crackers crushed
- 1 Juice of 1 lime
- 2 small whole fish such as snapper or trout, cleaned, scaled, and scored in a crisscross pattern
- 1 tbsp buttery spread trans fat–free nonhydrogenated, (such as Smart Balance), melted
- 1 Toothpicks for securing fish
