- 2 medium (5 ounces each) sweet potatoes peeled and cut into 8 wedges
- 1 lbs boneless pork loin cut into 1 1/2-inch pieces
- 1 medium onion chopped
- 1 tbsp olive oil
- 1 tbsp fresh thyme minced
- 1.66 cup lower-sodium chicken broth fat-free
- 1 Kosher or sea salt, to taste
- 0.5 cup fresh parsley chopped
