- 1 medium tomato peeled and diced
- 0.5 cup fresh green beans cut in 1/2-inch pieces (or use frozen)
- 1 medium green bell pepper cut in 4 pieces
- 1 tbsp olive oil
- 0.5 tsp salt
- 2 cup water
- 0.25 tsp annatto ground
- 0.5 cup canned lima beans rinsed and drained
- 0.5 cup artichoke hearts drained and chopped
