- 1 tbsp extra virgin olive oil
- 1 lbs calamari rings
- 1 onion(s) finely chopped
- 1 green bell pepper thinly sliced
- 1 red bell pepper thinly sliced
- 4 clove garlic minced
- 1 cup uncooked quinoa rinsed
- 1 tsp Spanish saffron threads
- 1 tbsp tomato paste
- 2 cup low sodium chicken broth
- 0.25 tsp coarse salt
- 1 can canned diced tomatoes
- 1 lbs wild, never frozen, large shrimp, peeled and deveined (about 30 shrimp)
- 3 tbsp flat leaf parsley chopped
- 1 lemon cut into 8 wedges
