- 1 cup long grain rice
- 2 1/4 cups water
- 1 Tablespoon butter
- 1 bay leaf
- Fat pinch salt
- 1/4 cup chopped cilantro leaves
- Fresh lime juice, salt, and pepper to taste
- 2 very large or 3 medium sweet potatoes, chopped
- 1 large yellow onion, thinly sliced
- 2 Tablespoons coconut oil
- 2 Tablespoons real maple syrup
- 1 teaspoon smoked paprika
- 3/4 teaspoon chili powder
- Salt and pepper
- 2 cans black beans
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon cumin
- 2 cloves garlic, minced
- Fat pinch sugar
- Salt and pepper, to taste
- 2 cups chopped or shredded rotisserie chicken
- 2 cups shredded monterey jack cheese
- 10 large burrito tortillas (I used spinach tortillas)
