  • 2 1/4 cups water
  • 1 Tablespoon butter
  • 1 bay leaf
  • Fat pinch salt
  • 1/4 cup chopped cilantro leaves
  • Fresh lime juice, salt, and pepper to taste
  • 2 very large or 3 medium sweet potatoes, chopped
  • 1 large yellow onion, thinly sliced
  • 2 Tablespoons coconut oil
  • 2 Tablespoons real maple syrup
  • 1 teaspoon smoked paprika
  • 3/4 teaspoon chili powder
  • Salt and pepper
  • 2 cans black beans
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon cumin
  • 2 cloves garlic, minced
  • Fat pinch sugar
  • Salt and pepper, to taste
  • 2 cups chopped or shredded rotisserie chicken
  • 2 cups shredded monterey jack cheese
  • 10 large burrito tortillas (I used spinach tortillas)
