  • 1 lb. pork (you can use almost any cut of pork, cut into bite-sized pieces)
  • 1 tsp. coriander (ground)
  • 1 tsp. ginger (ground)
  • 1 tsp. cumin (ground)
  • 1 clove garlic
  • 2/3 cup/70 g. tomato paste
  • 3 tbsp. ketjap manis (a thick, sweetened soy sauce from Indonesia)
  • 1 tbsp. vinegar
  • Salt and black pepper to taste
  • 1 bunch fresh cilantro
  • 1 cup peanuts (unsalted)
  • 1/4 cup coconut (desiccated)
  • 1 cucumber
  • 1 chile
  • 2 tbsp. oil
  • 1 tbsp. vinegar
  • Pinch of sugar
  • Salt and black pepper to taste
  • Optional: 1 cup white rice (cooked according to package directions)
  • Garnish: sambal (or another chili paste)
