• 3/4 teaspoon ground cinnamon, plus more for sprinkling over the tops (preferably Saigon or Vietnamese Cinnamon)
• 5 large egg yolks
• Dash salt

• 3 tablespoons superfine sugar (or raw sugar or granulated sugar)
