Dark Fruitcake Recipe

  • 2 ounces candied ginger, chopped finely
  • 1/2 pound seedless raisins
  • 1/2 pound seedless golden raisins
  • 1/2 pound dried currants
  • 4 ounces candied cherries, coarsely chopped, plus 4 whole cherries saved for decoration if desired
  • 4 ounces walnuts, or pecans, finely chopped, with 8 halves saved for decoration if desired
  • 2 lemon rinds finely grated
  • 1/2 cup orange marmalade
  • 1/4 cup lemon juice
  • 1/4 cup brandy, or orange juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 cups all-purpose flour, sifted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon mace
  • 1/4 teaspoon cloves
  • 1/4 teaspoon allspice
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 pound unsalted butter, or margarine
  • 1 cup sugar
  • 6 large eggs
