Cauliflower, Broccoli and Mustard Soup Recipe
Ingredients (15)
- 2 ounces/55 grams unsalted butter
- 1 medium red onion (finely chopped)
- 1 large clove garlic (finely chopped)
- 1/2 teaspoon mustard powder
- 1 medium cauliflower
- 1 small head broccoli
- 2 pints/1 liter vegetable stock
- 1 large potato (peeled and cubed)
- 1 tablespoon mustard (whole grain)
- 4 tablespoons crème fraiche
- salt to taste
- black pepper to taste
- TO SERVE
- 12 bread croutons (or as many as desired; see note below)
- 8 ounces cheddar cheese (mature, coarsely grated)
