• 3 large egg whites
• 2 tablespoons vegetable oil
• 1 tablespoon lime zest
• 1/2 cup solid vegetable shortening
• 1/2 cup butter, softened
• 1/2 teaspoon lime zest, plus additional for garnish
• 4 cups confectioners sugar
• 2 tablespoons tequila
• Green sanding sugar, for sprinkling on edge of cupcakes, optional garnish
