- 1 cup dark rum
- 3/4 cup sugar
- 1 cinnamon stick
- For the Meringue:
- 1 cup sugar
- 1/4 cup water
- 2 tablespoons light corn syrup
- 4 large egg whites, at room temperature (See Notes)
- 1/4 teaspoon salt
- For the Bananas Foster:
- 1 stick (8 tablespoons) unsalted butter, cut into 8 pieces
- 1/2 cup packed dark brown sugar
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon nutmeg
- 1/8 teaspoon salt
- 6 firm bananas, peeled and cut into 1/2-inch rings
- 2 tablespoons lemon juice
- 1/4 cup dark rum
