- 1 1/2 cups (6 ounces) white rice flour
- 1/2 cup (2 ounces) sweet rice flour
- 1/4 cup (1.75 ounces) granulated sugar plus 1 teaspoon, divided
- 1 teaspoon ground cinnamon
- 1/2 teaspoon xanthan gum
- 1/2 teaspoon salt
- 1/4 cup water, warm
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 cup milk, warm
- 1 large egg
- 2 tablespoons butter, melted and cooled
- 1/2 teaspoon vanilla extract
- Oil or nonstick cooking spray for greasing the bowl
- For the Apples:
- 2 tablespoons butter
- 4 tablespoons dark brown sugar
- 3 large cooking apples, peeled, cored, and diced (about 3 1/2 cups total) (Granny Smith work best)
- 1/2 cup apple cider
- 2 1/2 teaspoons corn starch
- For Frying:
- 2 cups vegetable oil
- For the Glaze:
- 2 cups confectioner's sugar
- 4 tablespoons half-and-half
- 1 teaspoon vanilla extract
