• For the Cheesecake Filling:
• 1 (8-ounce) package cream cheese, softened
• 1/4 cup (about 1 3/4 ounces) granulated sugar
• 1/4 cup sour cream
• 2 large eggs, at room temperature
• 1/2 teaspoon pure vanilla extract
• 1/4 teaspoon salt
• 3 ounces bittersweet chocolate, melted and slightly cooled (see notes)
• For the Glazes:
• 1/3 cup plus 1 tablespoon heavy cream
• 2 ounces bittersweet chocolate, finely chopped
• 1 tablespoon corn syrup
• 3 ounces white chocolate, finely chopped
