  • For Pie Crust:
  • 3/4 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1/2 cup old-fashioned oats
  • 2 tablespoons light brown sugar
  • 1/4 teaspoon fine sea salt
  • 8 tablespoons (1 stick) unsalted butter, cut into 1/2-inch cubes and chilled

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon light corn syrup
  • Pinch of fine sea salt
  • Pinch of cream of tartar
  • 1 vanilla bean, split, seeds scraped out and reserved (optional)
