- 1 tablespoon cornstarch
- 1 block soft tofu, about 16 ounces
- 1/2 cup peanut oil
- 1/2 cup medium-chopped green onion
- 3 tablespoons hot chili bean paste
- 1 tablespoon fermented black beans, crushed
- 2 teaspoon roasted and ground chile pepper
- 1 cup meat or vegetable stock
- 1 teaspoon sugar
- 2 teaspoons light soy sauce
- 1 tablespoon cornstarch mixed with 1/4 cup water
- To garnish:
- 1/2 tsp roasted and ground Sichuan peppercorns
- More green onion, finely chopped
- Chili oil to taste
