
Mini Chocolate Peanut Butter Whoopie Pies Recipe

- For the Whoopie Pies:
- 2 cups flour
- 1/2 cup Dutch-process cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup packed light brown sugar
- 1 stick (8 tablespoons) unsalted butter, softened
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 cup buttermilk (I used 1 cup milk with 1 tablespoon white vinegar added - let it sit for a minute, and you have buttermilk!)
- For the Filling:
- 6 oz cream cheese, room temperature
- 2 1/2 tablespoons butter, softened
- 3 cups confectioner's sugar
- 1/2 cup smooth peanut butter (preferably a commercial, homogenized brand)
- 2 teaspoons coarse sea salt
