- ⅔ cup grated Parmigiano-Reggiano cheese, about 2.7 ounces
- 1 clove garlic
- ¼ teaspoon salt
- ⅛ teaspoon freshly ground black pepper, about 3 twists of the grinder
- ¾ cup extra-virgin olive oil, more if needed
