• 3 pounds chuck roast
• salt and pepper
• 2 tablespoons olive oil
• 2 tablespoons butter
• 2 tablespoons flour
• 1 1/2 cups hot water
• 2 teaspoons beef bouillon base
• 1 cup red wine
• 1 tablespoon tomato paste
• 5 large carrots cut into large chunks
• 6 golden potatoes cut into 12 pieces (cut each potato in half, then each half into 6 pieces)
• 1 large sweet onion cut into large chunks
• 1 bunch fresh rosemary
• 1 bunch fresh thyme
