  • 5 cups water

  • For biryani gravy:
  • 3 tablespoons oil
  • 1.5 inches cinnamon
  • 3 cloves
  • 3 green cardamoms
  • 1 black cardamom
  • 1 star anise
  • 1 tej patta
  • ½ teaspoon caraway seeds
  • 1.5 cups thinly sliced onions
  • 1 tablespoon ginger-garlic paste
  • ½ teaspoon turmeric powder

  • 1 teaspoon kashmiri red chilli powder
  • 1 teaspoon coriander powder
  • ¼ teaspoon garam masala
  • 2 to 3 pinches grated nutmeg

  • 2 tablespoons chopped coriander leaves
  • ½ cup green peas
  • ¾ cup water

  • 1 cup thick coconut milk
  • 1 tablespoon kewra water

  • 2 tablespoons chopped mint leaves
  • 2 tablespoons chopped coriander leaves
  • 2 tablespoons water
  • 25 to 30 saffron strands
