
Chicken Tortilla Soup
Ingredients (25)
- For the Tortilla Strips:
- 8 corn tortillas, cut into thin strips
- 1/4 cup olive oil or avocado oil
- Kosher salt, to taste
- For the tortilla soup:
- 1 tablespoon olive oil or avocado oil
- 1 yellow onion, diced
- 1 red bell pepper, seeds removed and diced
- 1 small jalapeño pepper, seeds removed and minced
- 4 garlic cloves, minced
- 1 dried bay leaf
- 32 ounces chicken broth
- 14.5 ounces fire roasted diced tomatoes
- 10 ounces diced tomatoes & green chiles, like Rotel
- 15 ounces black beans, rinsed and drained
- 2 cups shredded cooked chicken, we use rotisserie chicken
- 1 cup frozen or fresh corn
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- Kosher salt and black pepper, to taste
- 1/3 cup fresh cilantro leaves, chopped
- 1 tablespoon fresh lime juice
- Optional Toppings: shredded cheese, sour cream, avocado, cilantro, lime wedges
