- 1 small yellow onion, diced
- 1/4 cup finely diced bell peppers, any color
- 4 cloves garlic, minced
- 2 cans (15 ounces each) black-eyed peas, well rinsed and drained
- 1 teaspoon Italian Seasoning
- 4 cups chopped kale leaves
- 6 cups low sodium chicken broth
- Salt and fresh ground black pepper, to taste, if needed
