- 3/4 cup (180ml) heavy cream
- 3 large eggs (150g), separated
- 1/2 teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume
- 1/4 teaspoon espresso
- 1/8 teaspoon cream of tartar
- 1/4 cup (50g) granulated sugar
