• 7 ounces (198g) 70% chocolate
• 3/4 cup (180ml) heavy cream
• 3 large eggs (150g), separated
• 1/2 teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume
• 1/4 teaspoon espresso
• 1/8 teaspoon cream of tartar
• 1/4 cup (50g) granulated sugar
• Whipped cream, for serving (optional)
