- For the pork:
- 2 tablespoons canola oil
- 2 pounds boneless pork shoulder
- 1 cup BBQ sauce use your favorite
- 1/2 cup water
- For the stew:
- 3 tablespoons butter
- 1 large yellow onion diced
- 1 teaspoon salt
- 4 cloves garlic minced
- 28 ounces can of fire-roasted tomatoes
- 2 cups frozen or canned lima beans
- 15 ounce can of corn rinsed and drained
- 1 cup BBQ sauce
- 11/2 tablespoons Worcestershire sauce
- 1/2 teaspoon smoked paprika
- 4 cups chicken stock
- salt and freshly ground black pepper to taste
