  • 1 1/2 ounces (about 2/3 cup; 40 g) dried flor de Jamaica (hibiscus), rinsed with cold water in a colander or strainer (see note)
  • 8 ounces sugar (1 cup plus 2 tablespoons; 230 g)
  • 2 tablespoons (30 ml) fresh key lime juice from 2 limes or 1 tablespoon (15 ml) fresh Persian lime juice from 1 lime 
  • 1/4 teaspoon Diamond Crystal kosher salt; if using table salt, use half as much by volume
