Hasselback Potatoes

Ingredients (4)

  • 4 medium Russet potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons melted butter
  • sea salt to taste

Directions

  1. Preheat the oven to 400°F. Wash potatoes and pat them dry.
  2. Cut potatoes in half lengthwise, then make thin, evenly spaced slices along the width of each potato, being careful not to cut all the way through. Place chopsticks on either side of the potato to avoid cutting through.
  3. Place potatoes in a large bowl and coat with olive oil and melted butter, spooning oil and butter between the slices. Season well with salt.
  4. Place potatoes flat-side down in a cast-iron skillet.
  5. Cook over medium heat until the oil and butter are foaming, about 5 minutes. Bake in the preheated oven until potatoes are golden brown and crispy on the edges, 45 to 60 minutes. The cooking time may vary based on the size of potatoes.
