
Chicken for Fajitas

- 5 pounds chicken thighs
- ½ red onion, minced
- ½ cup minced cilantro
- 4 limes, squeezed
- 3 tablespoons olive oil
- 1½ tablespoons kosher salt
- 1 tablespoon ground cumin
- 2 teaspoons garlic powder
Directions
- Place chicken thighs in a large bowl; add red onion, cilantro, lime juice, olive oil, salt, cumin, and garlic powder and mix until evenly coated. Refrigerate and let marinate for 4 to 5 hours.
- Preheat a grill and cook chicken until a thermometer inserted in the thickest part of the chicken reads 165°F (74°C).
