  • 5 pounds chicken thighs
  • ½ red onion, minced
  • ½ cup minced cilantro
  • 4 limes, squeezed
  • 3 tablespoons olive oil
  • 1½ tablespoons kosher salt
  • 1 tablespoon ground cumin
  • 2 teaspoons garlic powder

Directions

  1. Place chicken thighs in a large bowl; add red onion, cilantro, lime juice, olive oil, salt, cumin, and garlic powder and mix until evenly coated. Refrigerate and let marinate for 4 to 5 hours.
  2. Preheat a grill and cook chicken until a thermometer inserted in the thickest part of the chicken reads 165°F (74°C).
  3. Let it rest, then chop, and enjoy!
