
Hungarian Cucumber Salad
Ingredients (9)
- 1 English cucumber
- ½ red onion, thinly sliced
- 1 tablespoon salt
- 1 cup cold water
- ¼ cup white vinegar (5%)
- 3 tablespoons sugar
- 1 clove garlic, minced
- 1½ teaspoons sweet paprika powder
- ground black pepper
Directions
- Slice cucumber as thinly as possible into a bowl using a mandolin slicer. Add sliced red onion.
- Add salt to cucumber-onion mixture and stir until evenly coated with salt. Let sit for 15 minutes to draw out the water from the cucumbers. The cucumbers will release about ½ cup liquid.
- Take large handfuls of cucumber-onion mixture; squeeze out as much liquid as you can and place the balls of squeezed cucumber-onion in a bowl. Discard the liquid.
- Combine water, vinegar, and sugar in a bowl and stir until sugar is dissolved. Pour sugar-vinegar mixture over squeezed cucumber-onion and mix thoroughly.
- Add chopped garlic to cucumber-onion mixture and season with paprika powder and ground black pepper.
