Hungarian Cucumber Salad

25 minutes Prep: 10 minutes + 15 minutes sitting

Ingredients (9)

  • 1 English cucumber
  • ½ red onion, thinly sliced
  • 1 tablespoon salt
  • 1 cup cold water
  • ¼ cup white vinegar (5%)
  • 3 tablespoons sugar
  • 1 clove garlic, minced
  • 1½ teaspoons sweet paprika powder
  • ground black pepper

Directions

  1. Slice cucumber as thinly as possible into a bowl using a mandolin slicer. Add sliced red onion.
  2. Add salt to cucumber-onion mixture and stir until evenly coated with salt. Let sit for 15 minutes to draw out the water from the cucumbers. The cucumbers will release about ½ cup liquid.
  3. Take large handfuls of cucumber-onion mixture; squeeze out as much liquid as you can and place the balls of squeezed cucumber-onion in a bowl. Discard the liquid.
  4. Combine water, vinegar, and sugar in a bowl and stir until sugar is dissolved. Pour sugar-vinegar mixture over squeezed cucumber-onion and mix thoroughly.
  5. Add chopped garlic to cucumber-onion mixture and season with paprika powder and ground black pepper.
