Peanut Butter Kiss Cookies

  • ¾ cup smooth peanut butter
  • ½ cup butter, softened
  • ½ cup white sugar, plus a little bit extra for rolling
  • ½ cup light brown sugar
  • ¼ teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ⅓ teaspoon baking soda
  • 36 Hershey kisses

Directions

  1. Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Combine peanut butter, butter, white sugar, brown sugar, and salt together in a bowl; beat with a hand mixer until smooth and creamy.
  3. Add egg and vanilla extract to creamed butter mixture; beat until well combined.
  4. Add flour and baking soda to creamed butter-egg mixture; mix until dough is well combined.
  5. Roll dough into 1-inch balls and coat outside of each ball with a little white sugar.
  6. Place balls on the prepared baking sheet, at least 2 inches apart to give them room to expand.
  7. Bake in the preheated oven until the bottoms are golden brown, 8 to 10 minutes.
  8. While cookies are baking, unwrap the kisses so they are ready as soon as cookies are out of the oven.
  9. Immediately press kiss into the center of each cookie with the fat-side down and the top of the kiss facing up.
