
Peanut Butter Kiss Cookies

- ¾ cup smooth peanut butter
- ½ cup butter, softened
- ½ cup white sugar, plus a little bit extra for rolling
- ½ cup light brown sugar
- ¼ teaspoon salt
- 1 egg
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- ⅓ teaspoon baking soda
- 36 Hershey kisses
Directions
- Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper.
- Combine peanut butter, butter, white sugar, brown sugar, and salt together in a bowl; beat with a hand mixer until smooth and creamy.
- Add egg and vanilla extract to creamed butter mixture; beat until well combined.
- Add flour and baking soda to creamed butter-egg mixture; mix until dough is well combined.
- Roll dough into 1-inch balls and coat outside of each ball with a little white sugar.
- Place balls on the prepared baking sheet, at least 2 inches apart to give them room to expand.
- Bake in the preheated oven until the bottoms are golden brown, 8 to 10 minutes.
- While cookies are baking, unwrap the kisses so they are ready as soon as cookies are out of the oven.
- Immediately press kiss into the center of each cookie with the fat-side down and the top of the kiss facing up.
