
Elotes (Mexican Corn)

- 8 ears of corn, husked
- ¼ cup mayo
- ¼ cup sour cream
- ½ cup grated Cojita cheese
- 2 teaspoons Tajin seasoning
- ½ cup freshly chopped cilantro
- 1 lime, sliced
Directions
- Bring a pot of salted water to a boil; cook corn until tender, about 10 minutes. If you want to grill the corn instead, that is totally fine and delicious too.
- Mix mayo and sour cream together in a shallow bowl.
- Roll each ear of corn around in the mayo-sour cream mixture to coat, set aside.
- Sprinkle Cojita cheese, tajin, and cilantro evenly over each ear of corn. It should stick to the mayo/sour cream mixture.
- Enjoy immediately. Put a tiny bit of lime juice on each to add extra flavor.
