Elotes (Mexican Corn)

  • 8 ears of corn, husked
  • ¼ cup mayo
  • ¼ cup sour cream
  • ½ cup grated Cojita cheese
  • 2 teaspoons Tajin seasoning
  • ½ cup freshly chopped cilantro
  • 1 lime, sliced

Directions

  1. Bring a pot of salted water to a boil; cook corn until tender, about 10 minutes. If you want to grill the corn instead, that is totally fine and delicious too.
  2. Mix mayo and sour cream together in a shallow bowl.
  3. Roll each ear of corn around in the mayo-sour cream mixture to coat, set aside.
  4. Sprinkle Cojita cheese, tajin, and cilantro evenly over each ear of corn. It should stick to the mayo/sour cream mixture.
  5. Enjoy immediately. Put a tiny bit of lime juice on each to add extra flavor.
