Marry Me Bruschetta

  • 8 Roma (plum) tomatoes, diced
  • ⅓ cup ribboned fresh basil
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons kosher salt, or more to taste
  • 2 cloves garlic, minced
  • ⅓ cup extra-virgin olive oil
  • 1 loaf French bread, cut into ½ -inch slices
  • 1 ounce freshly grated Parmesan cheese
  • high-quality balsamic vinegar (optional)

Directions

  1. Combine tomatoes, basil, 2 tablespoons olive oil, 2 teaspoons kosher salt, and garlic in a bowl. Let tomato mixture sit for flavors to combine, at least 15 minutes.
  2. Heat a large skillet over medium-high heat and add ⅓  cup olive oil. Add the sliced French bread to hot oil and toast until golden brown on one side, 2 to 3 minutes. Flip the slices and toast the other side, adding more oil if needed to achieve a golden, crispy texture, 2 to 3 minutes more.
  3. Taste the tomato mixture and adjust seasoning as needed.
  4. Spoon the tomato mixture onto the toasted bread slices; top with freshly grated Parmesan cheese. Drizzle balsamic vinegar over Parmesan layer.
