Caramelized Onion Egg Salad

Ingredients (6)

  • ¼ cup butter
  • 1 large onion, diced
  • salt to taste
  • 1 dozen hard boiled eggs, peeled
  • 1 heaping tablespoon mayonnaise
  • ½ teaspoon salt

Directions

  1. Heat butter in a skillet over medium-low heat; cook and stir onion until golden brown and caramelized, about 30 minutes. Season caramelized onion with salt.
  2. Shred hard-boiled eggs into a bowl using a grater.
  3. Combine eggs, caramelized onions, mayo, and ½ teaspoon salt in a bowl until evenly mixed.
  4. Eat immediately, warm is best! Eat on toast, in a sandwich, or as a side! The blend of sweet onions and creamy eggs makes it irresistible!
