
Caramelized Onion Egg Salad
Ingredients (6)
- ¼ cup butter
- 1 large onion, diced
- salt to taste
- 1 dozen hard boiled eggs, peeled
- 1 heaping tablespoon mayonnaise
- ½ teaspoon salt
Directions
- Heat butter in a skillet over medium-low heat; cook and stir onion until golden brown and caramelized, about 30 minutes. Season caramelized onion with salt.
- Shred hard-boiled eggs into a bowl using a grater.
- Combine eggs, caramelized onions, mayo, and ½ teaspoon salt in a bowl until evenly mixed.
- Eat immediately, warm is best! Eat on toast, in a sandwich, or as a side! The blend of sweet onions and creamy eggs makes it irresistible!
