Mexican Street Tacos - Chicken

  • 4 tablespoons chili powder
  • 3 tablespoons ground cumin
  • 3 tablespoons kosher salt
  • 2 tablespoons onion powder
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon dried oregano
  • ½ tablespoon black pepper
  • 4 pounds skinless, boneless chicken thighs

  • 4 cups guacamole
  • 4 cups pico de gallo
  • 2 cups shredded cheddar cheese
  • 16 tortillas

Directions

  1. Mix chili powder, cumin, salt, onion powder, paprika, garlic powder, oregano, and black pepper together in a bowl until seasoning is well mixed.
  2. Place chicken thighs in another large bowl and sprinkle seasoning all over the chicken thighs, massaging seasoning into every nook and cranny of the thighs.
  3. Heat grill.
  4. Cook seasoning chicken on the grill until no longer pink in the center and a thermometer stuck into the thickest part of each thigh reads 165 degrees F, 10 to 15 minutes.
  5. Assemble tacos by layering chicken, guacamole, pico de gallo, and cheddar cheese onto each tortilla!
