Mexican Street Tacos - Chicken
Ingredients (13)
- 4 tablespoons chili powder
- 3 tablespoons ground cumin
- 3 tablespoons kosher salt
- 2 tablespoons onion powder
- 2 tablespoons smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon dried oregano
- ½ tablespoon black pepper
- 4 pounds skinless, boneless chicken thighs
- 4 cups guacamole
- 4 cups pico de gallo
- 2 cups shredded cheddar cheese
- 16 tortillas
Directions
- Mix chili powder, cumin, salt, onion powder, paprika, garlic powder, oregano, and black pepper together in a bowl until seasoning is well mixed.
- Place chicken thighs in another large bowl and sprinkle seasoning all over the chicken thighs, massaging seasoning into every nook and cranny of the thighs.
- Heat grill.
- Cook seasoning chicken on the grill until no longer pink in the center and a thermometer stuck into the thickest part of each thigh reads 165 degrees F, 10 to 15 minutes.
- Assemble tacos by layering chicken, guacamole, pico de gallo, and cheddar cheese onto each tortilla!
