  • 1 red bell pepper, minced
  • ½ cucumber, minced
  • ½ carrot, minced
  • ½ zucchini, minced
  • 1 small bunch chives, minced
  • 4 scallions, minced
  • 1 (12-ounce) tub cream cheese
  • salt to taste

Directions

  1. Mix red bell pepper, cucumber, carrot, zucchini, chives, and scallions together in a bowl.
  2. Add cream cheese to vegetable mixture and mix well; season with salt.
  3. Serve veggie cream cheese on a bagel or toasted bread.
