Parmesan Crusted Chicken Chopped Salad
Ingredients (15)
- 1 English cucumber, chopped
- 1 red bell pepper, chopped
- 2 carrots, chopped
- 2 cups chopped romaine lettuce
- 1½ cups halved cherry tomatoes
- 1 cup chopped red cabbage
- ½ cup chopped red onion
- ½ cup chopped cheddar cheese
- 2 scallions, chopped and divided into 2 equal parts
- ¼ cup chopped Italian parsley
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 1 teaspoon Dijon mustard
- salt and black pepper to taste
- 2 cups chopped Parmesan crusted chicken
Directions
- Combine cucumber, red bell pepper, carrots, lettuce, tomatoes, cabbage, red onion, cheddar cheese, and ½ the scallions in a bowl.
- Mix Italian parsley, olive oil, red wine vinegar, mustard, and remaining scallions together in a separate bowl until dressing is smooth; season salt and pepper to taste.
- Pour dressing over chopped vegetables until you have desired ratio of salad to dressing.
- Divide chopped salad into two bowls and top with chicken.
