Parmesan Crusted Chicken Chopped Salad

Ingredients (15)

  • 1 English cucumber, chopped
  • 1 red bell pepper, chopped
  • 2 carrots, chopped
  • 2 cups chopped romaine lettuce
  • 1½ cups halved cherry tomatoes
  • 1 cup chopped red cabbage
  • ½ cup chopped red onion
  • ½ cup chopped cheddar cheese
  • 2 scallions, chopped and divided into 2 equal parts
  • ¼ cup chopped Italian parsley
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 1 teaspoon Dijon mustard
  • salt and black pepper to taste
  • 2 cups chopped Parmesan crusted chicken

Directions

  1. Combine cucumber, red bell pepper, carrots, lettuce, tomatoes, cabbage, red onion, cheddar cheese, and ½ the scallions in a bowl.
  2. Mix Italian parsley, olive oil, red wine vinegar, mustard, and remaining scallions together in a separate bowl until dressing is smooth; season salt and pepper to taste.
  3. Pour dressing over chopped vegetables until you have desired ratio of salad to dressing.
  4. Divide chopped salad into two bowls and top with chicken.
