Spam Musubi Deviled Eggs

Ingredients (9)

  • 8 large eggs
  • 1 can Spam
  • 1 tablespoon Kewpi mayo
  • 2 teaspoons Dijon mustard
  • 1 teaspoon champagne vinegar
  • ½ baby kosher dill pickle, minced
  • salt
  • 2 sheets nori, cut long into 16 (½-inch) thick ribbons
  • sriracha sauce

Directions

  1. Gently place eggs in a saucepan of boiling water and cook for 10 minutes. Run cold water over eggs until cooled, 10 minutes. Peel the eggs.
  2. Slice Spam into small rectangles about ¼-inch thick.
  3. Heat a non-stick pan over medium heat. Cook Spam slices until they’re golden and crispy on both sides, 3 to 4 minutes per side. Cut Spam into small cubes or strips that will fit on top of deviled eggs.
  4. Slice the cooled eggs in half lengthwise. Gently scoop out the yolks and place them in a mixing bowl.
  5. Mash yolks with mayo, Dijon mustard, champagne vinegar, and pickle until smooth and creamy; season with salt.
  6. Fill the egg whites by spooning or piping the yolk mixture back into the egg whites. Place a small piece of crispy Spam on top of each filled egg.
  7. Wrap each egg with nori ribbon and top with sriracha.
