Spam Musubi Deviled Eggs
Ingredients (9)
- 8 large eggs
- 1 can Spam
- 1 tablespoon Kewpi mayo
- 2 teaspoons Dijon mustard
- 1 teaspoon champagne vinegar
- ½ baby kosher dill pickle, minced
- salt
- 2 sheets nori, cut long into 16 (½-inch) thick ribbons
- sriracha sauce
Directions
- Gently place eggs in a saucepan of boiling water and cook for 10 minutes. Run cold water over eggs until cooled, 10 minutes. Peel the eggs.
- Slice Spam into small rectangles about ¼-inch thick.
- Heat a non-stick pan over medium heat. Cook Spam slices until they’re golden and crispy on both sides, 3 to 4 minutes per side. Cut Spam into small cubes or strips that will fit on top of deviled eggs.
- Slice the cooled eggs in half lengthwise. Gently scoop out the yolks and place them in a mixing bowl.
- Mash yolks with mayo, Dijon mustard, champagne vinegar, and pickle until smooth and creamy; season with salt.
- Fill the egg whites by spooning or piping the yolk mixture back into the egg whites. Place a small piece of crispy Spam on top of each filled egg.
- Wrap each egg with nori ribbon and top with sriracha.
