Steak & Cheese Pinwheels With Herb Butter Sauce

  • 2 pounds skirt steak, butterflied and pounded to ¼-inch thickness
  • 8 slices pepper jack cheese
  • 2 jalapeños, seeded and diced
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons vegetable oil
  • 4 tablespoons butter, softened
  • 1 tablespoon minced jalapeños
  • 1 tablespoon chopped cilantro
  • 1 lime, juiced
  • 1 teaspoon minced garlic
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 lime, cut into wedges
  • 2 tablespoons chopped fresh cilantro, or as needed

Directions

  1. Combine 1 teaspoon kosher salt, ½ teaspoon ground black pepper, chili powder, paprika, cumin, thyme, garlic powder, and onion powder in a bowl until seasoning is well mixed.
  2. Sprinkle seasoning onto both sides of the steak.
  3. Layer pepper jack cheese slices onto steak and top with 2 diced jalapeños and 2 tablespoons chopped cilantro.
  4. Roll steak tightly from the short end, secure with toothpicks or butchers twine every 2 inches; slice into 1-inch pinwheels.
  5. Preheat grill or skillet to medium-high (400 to 450 degrees Fahrenheit). Coat pinwheels with vegetable oil and grill until the internal temperature is 145 degrees Fahrenheit, 3 to 4 minutes per side. Rest 3 to 5 minutes.
  6. Combine butter, 1 tablespoon minced jalapeños, 1 tablespoon chopped cilantro, lime juice, garlic, ½ teaspoon kosher salt, and black pepper in a saucepan; cook over medium heat until butter is melted, stirring frequently, 2 to 3 minutes.
  7. Remove toothpicks or twine from steak. Top each pinwheel with lime butter and garnish with lime wedges and 2 tablespoons chopped cilantro.
