Steak & Cheese Pinwheels With Herb Butter Sauce

- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 pounds skirt steak, butterflied and pounded to ¼-inch thickness
- 8 slices pepper jack cheese
- 2 jalapeños, seeded and diced
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons vegetable oil
- 4 tablespoons butter, softened
- 1 tablespoon minced jalapeños
- 1 tablespoon chopped cilantro
- 1 lime, juiced
- 1 teaspoon minced garlic
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 1 lime, cut into wedges
- 2 tablespoons chopped fresh cilantro, or as needed
Directions
- Combine 1 teaspoon kosher salt, ½ teaspoon ground black pepper, chili powder, paprika, cumin, thyme, garlic powder, and onion powder in a bowl until seasoning is well mixed.
- Sprinkle seasoning onto both sides of the steak.
- Layer pepper jack cheese slices onto steak and top with 2 diced jalapeños and 2 tablespoons chopped cilantro.
- Roll steak tightly from the short end, secure with toothpicks or butchers twine every 2 inches; slice into 1-inch pinwheels.
- Preheat grill or skillet to medium-high (400 to 450 degrees Fahrenheit). Coat pinwheels with vegetable oil and grill until the internal temperature is 145 degrees Fahrenheit, 3 to 4 minutes per side. Rest 3 to 5 minutes.
- Combine butter, 1 tablespoon minced jalapeños, 1 tablespoon chopped cilantro, lime juice, garlic, ½ teaspoon kosher salt, and black pepper in a saucepan; cook over medium heat until butter is melted, stirring frequently, 2 to 3 minutes.
- Remove toothpicks or twine from steak. Top each pinwheel with lime butter and garnish with lime wedges and 2 tablespoons chopped cilantro.
