Tortilla Kebab Skewers
Ingredients (14)
- 3 pounds ground beef
- 2 onions, minced
- 1 red bell pepper, minced
- 6 garlic cloves, minced
- ¼ cup chopped fresh parsley
- 1 tablespoon ground cumin
- 2 tablespoons paprika
- 2 tablespoons dried coriander
- 1 tablespoon garlic powder
- 2 teaspoons ground black pepper
- 1 tablespoon kosher salt, or more to taste
- 10 extra large tortillas, cut into squares
- 2 tablespoons olive oil
- Dipping Sauce for Tortilla Kebabs
Directions
- Mix ground beef, onions, red bell pepper, 6 garlic, parsley, cumin, paprika, coriander, garlic powder, ground black pepper, and kosher salt together in a bowl.
- Spread a layer of beef mixture onto 1 tortilla. Place a tortilla on top of ground beef mixture and continue layering ground beef mixture and 1 tortilla until 5 tortillas are used. Repeat layering and stacking with remaining beef mixture and 5 tortillas to make a second stack.
- Cut each stack into 1-inch wide strips, turn on side, press skewers through the stacks starting at the bottom until all the way through. Cut between skewers to create kebabs.
- Heat a large skillet over medium-high heat; add oil. Cook kebabs until browned and cooked through, rotating so each side gets cooked, 2 to 3 minutes per side.
