Tortilla Kebab Skewers

  • 3 pounds ground beef
  • 2 onions, minced
  • 1 red bell pepper, minced
  • 6 garlic cloves, minced
  • ¼ cup chopped fresh parsley
  • 1 tablespoon ground cumin
  • 2 tablespoons paprika
  • 2 tablespoons dried coriander
  • 1 tablespoon garlic powder
  • 2 teaspoons ground black pepper
  • 1 tablespoon kosher salt, or more to taste
  • 10 extra large tortillas, cut into squares
  • 2 tablespoons olive oil
  • Dipping Sauce for Tortilla Kebabs

Directions

  1. Mix ground beef, onions, red bell pepper, 6 garlic, parsley, cumin, paprika, coriander, garlic powder, ground black pepper, and kosher salt together in a bowl.
  2. Spread a layer of beef mixture onto 1 tortilla. Place a tortilla on top of ground beef mixture and continue layering ground beef mixture and 1 tortilla until 5 tortillas are used. Repeat layering and stacking with remaining beef mixture and 5 tortillas to make a second stack.
  3. Cut each stack into 1-inch wide strips, turn on side, press skewers through the stacks starting at the bottom until all the way through. Cut between skewers to create kebabs.
  4. Heat a large skillet over medium-high heat; add oil. Cook kebabs until browned and cooked through, rotating so each side gets cooked, 2 to 3 minutes per side.
