Coca-Cola Carnitas (Instant Pot Edition)

Ingredients (10)

  • 1 (8 pound) lean boneless pork roast, cut into large chunks
  • 2 (12-ounce) bottles Mexican Coke
  • 10 cloves garlic, peeled
  • 1 large yellow onion, loosely chopped
  • 1 cup fresh orange juice
  • 1/2 cup fresh lime juice
  • 3 tablespoon fine sea salt
  • 2 tablespoon ground cumin
  • 2 tablespoon dried oregano
  • 2 teaspoon freshly cracked black pepper

Directions

  1. Combine pork roast, Coke, garlic, onion, orange juice, lime juice, sea salt, cumin, oregano, and black pepper in the Instant Pot.
  2. Cook on High Pressure for 40 minutes, then allow a natural release.
  3. Turn on the oven broiler to High.
  4. Remove the lid and transfer the pork to a baking sheet. Shred the pork using 2  forks.
  5. Spoon about ⅓ the cooking liquid over pork and toss.
  6. Broil until edges start to crisp, 4 to 5 minutes. Toss and turn the meat over, and broil until desired crispiness is reached, about 5 minutes more.
