Ingredients (7)

  • 1 (4-pound) boneless beef chuck roast
  • salt and ground black pepper
  • 2 tablespoons butter
  • 2 large onions, thinly sliced
  • ¼ cup horseradish spread, or to taste
  • 9 Hawaiian slider buns (such as King’s Hawaiian)
  • 9 provolone cheese slices

Directions

  1. Preheat oven to 325 degrees Fahrenheit. Season chuck roast generously with salt and ground black pepper; place in a baking dish, cover, and bake until tender and meat is easy to shred with a fork, about 4 hours.
  2. Shred meat into large chunks. (If it doesn’t pull easily, bake 30 minutes more.)
  3. Increase oven temperature to 425 degrees Fahrenheit. Toss shredded beef in the rendered fat and bake uncovered until crispy edges form, about 25 minutes.
  4. Melt butter in a skillet over medium-low heat. Add onions and a pinch of salt. Cook onions, stirring occasionally, until deeply caramelized, 30 to 40 minutes.
  5. Spread horseradish on the bottom half of Hawaiian rolls; top with shredded chuck roast, caramelized onions, and a layer of provolone. Add bun tops.
  6. Bake sliders at 350 degrees Fahrenheit until rolls are toasted and cheese is melted, about 10 minutes.
