Viral One Step Chuck Roast Sliders

- 1 (4-pound) boneless beef chuck roast
- salt and ground black pepper
- 2 tablespoons butter
- 2 large onions, thinly sliced
- ¼ cup horseradish spread, or to taste
- 9 Hawaiian slider buns (such as King’s Hawaiian)
- 9 provolone cheese slices
Directions
- Preheat oven to 325 degrees Fahrenheit. Season chuck roast generously with salt and ground black pepper; place in a baking dish, cover, and bake until tender and meat is easy to shred with a fork, about 4 hours.
- Shred meat into large chunks. (If it doesn’t pull easily, bake 30 minutes more.)
- Increase oven temperature to 425 degrees Fahrenheit. Toss shredded beef in the rendered fat and bake uncovered until crispy edges form, about 25 minutes.
- Melt butter in a skillet over medium-low heat. Add onions and a pinch of salt. Cook onions, stirring occasionally, until deeply caramelized, 30 to 40 minutes.
- Spread horseradish on the bottom half of Hawaiian rolls; top with shredded chuck roast, caramelized onions, and a layer of provolone. Add bun tops.
- Bake sliders at 350 degrees Fahrenheit until rolls are toasted and cheese is melted, about 10 minutes.
