  • 4 pounds beef tenderloin, thinly sliced
  • ½ cup sugar
  • ½ cup oyster sauce
  • ¼ cup honey
  • 2 tablespoons sesame oil
  • ¼ cup minced garlic
  • ¼ cup dark soy sauce
  • ¼ cup Worcestershire sauce
  • ½ cup sambal oelek for heat, optional
  • 1 head broccoli, chopped into small florets and stems
  • 3 tablespoons dark soy sauce
  • ⅓ cup regular soy sauce
  • 2 teaspoons sugar
  • 2 (7-ounce) packs frozen udon noodles
  • ½ yellow onion, sliced
  • ¼ cup chopped green onions, or as desired
  • 1 tablespoon sesame seeds, or as desired

Directions

  1. Place beef in a large bowl; add ½ cup sugar, oyster sauce, honey, sesame oil, garlic, ¼ cup dark soy sauce, Worcestershire sauce, and sambal oelek to make the marinade. Mix beef with the marinade using your hands until fully coated; marinate for at least 30 minutes.
  2. Bring a pot of water to a boil. Blanch the broccoli by adding to boiling water until it turns bright green, about 1 minute. Drain and set aside.
  3. Mix 3 tablespoons dark soy, regular soy, and 2 teaspoons sugar together in a bowl to make noodle sauce.
  4. Bring a pot of water to a boil; cook udon noodles for 1 minute. Drain water and toss noodles with noodle sauce.
  5. Heat a skillet over medium-high heat; sear marinated beef in batches until cooked through, 3 to 4 minutes. Remove and set aside.
  6. Cook and stir onion in the same skillet until softened, 1 to 2 minutes; add broccoli and sauced noodles.
  7. Return beef to skillet and toss everything together until heated through top with green onions and sesame seeds. Serve hot.
