Double Fried French Fries

  • 5 russet potatoes
  • 1 cup oil for frying, or as needed
  • salt

Directions

  1. Peel and cut potatoes into traditional French fry size; soak in ice water for 15 to 30 minutes. Drain and pat completely dry.
  2. Heat oil to 325 degrees Fahrenheit in a deep cast iron skillet or large pot. Cook potatoes until pale and lightly cooked, 3 to 4 minutes. Remove and rest a few minutes.
  3. Increase oil to 375 degrees Fahrenheit and fry again until golden and crisp, 2 to 3 minutes. Strain fries, place in a large bowl, and salt immediately.
