Sheet Pan Breakfast Meal Prep

Ingredients (10)

  • olive oil spray
  • 12 eggs, or more as needed
  • ¼ cup milk
  • salt
  • 1 pound baby potatoes, diced small
  • 1 heaping cup chopped spinach
  • 1 cup shredded cheddar cheese, or more to taste
  • ½ cup minced bell peppers
  • ¼ cup minced onion
  • 16 breakfast sausage patties (not frozen)

Directions

  1. Preheat oven to to 350 degrees Fahrenheit. Spray olive oil spray onto sheet pan with a 1-inch rim.
  2. Whisk eggs, milk, salt, and black pepper together in a bowl; pour into prepared sheet pan.
  3. Top egg mixture with potatoes, spinach, cheddar cheese, bell peppers, onion, and breakfast sausage patties.
  4. Bake in the preheated oven until eggs are set, 20 to 25 minutes. Cool, cut into squares, and meal prep for the week.
