Sheet Pan Breakfast Meal Prep
Ingredients (10)
- olive oil spray
- 12 eggs, or more as needed
- ¼ cup milk
- salt
- 1 pound baby potatoes, diced small
- 1 heaping cup chopped spinach
- 1 cup shredded cheddar cheese, or more to taste
- ½ cup minced bell peppers
- ¼ cup minced onion
- 16 breakfast sausage patties (not frozen)
Directions
- Preheat oven to to 350 degrees Fahrenheit. Spray olive oil spray onto sheet pan with a 1-inch rim.
- Whisk eggs, milk, salt, and black pepper together in a bowl; pour into prepared sheet pan.
- Top egg mixture with potatoes, spinach, cheddar cheese, bell peppers, onion, and breakfast sausage patties.
- Bake in the preheated oven until eggs are set, 20 to 25 minutes. Cool, cut into squares, and meal prep for the week.
