Soup Dumpling Lasagna

  • 1 pound ground pork
  • ½ pound shrimp, chopped
  • 4 scallions, thinly sliced
  • 5 cloves garlic, minced
  • 3 tablespoons soy sauce (or tamari)
  • 1 tablespoon minced fresh ginger
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon chili crisp, or to taste
  • 1 teaspoon rice vinegar
  • ¾ teaspoon white pepper (or black pepper)
  • 1 package wonton or dumpling wrappers
  • 2 tablespoons chicken broth
  • ¼ cup soy sauce
  • 2 tablespoons chopped scallions
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon sesame seeds
  • 1 tablespoon chili crisp

Directions

  1. Layer ground pork, shrimp, 4 thinly sliced scallions, garlic, 3 tablespoons soy sauce, ginger, sesame oil, 1 teaspoon chili crisp, rice vinegar, and white pepper in a large bowl; mix gently with your hands until everything is just combined.
  2. Place a small baking dish that will fit inside a large pot or skillet on the counter. Fill a small bowl with water for dipping.
  3. Quickly dip a wonton wrapper in water and lay it flat in the bottom of the baking dish, overlapping slightly if needed.
  4. Spread a thin layer of the pork-shrimp mixture over the wrapper layer. Repeat a wrapper layer and then a pork-shrimp layer until you get to the top.
Finish with a final layer of wrappers; pour chicken broth over the top.
  5. Transfer the baking dish to a large pot or skillet. Fill pot with water half way up the side of the baking dish and cover pot or skillet. Turn stove heat to high, and steam soup dumpling lasagna until the pork is fully cooked and the wrappers are tender and glossy, about 25 minutes.
  6. Combine ¼ cup soy sauce, 2 tablespoons chopped scallions, rice wine vinegar, sesame seeds, and 1 tablespoon chili crisp in a bowl until sauce is well mixed; pour over the soup dumpling lasagna and enjoy.
