- 2 cups sliced carrots

- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- For the Parsnip Mash:
- 2 lbs. parsnips
- 3 - 4 tbsp heavy cream
- 3 tbsp butter
- 2 tbsp sour cream
- 1 tsp garlic powder
- salt and pepper to taste
- For the Creamy Curry Sauce:
- 3 tbsp butter
- 1 tbsp yellow curry powder
- 1/3 cup sour cream
- 1/4 cup mayo
- 1/3 cup milk
- 1/4 tsp cayenne pepper
- 1/4 tsp garlic powder
- 1/4 tsp garam masala
- salt and pepper to taste
