 - 1 pound ground lamb
 - 2/3 cup cooked couscous
 - 1/2 cup fresh cilantro, minced
 - 1 teaspoon kosher salt
 - Olive oil for cooking
 - Harissa Sauce:
 - 3-4 red jalapenos, seeded and chopped
 - 2 cloves garlic
 - 1 roasted red pepper
 - 2 teaspoons tomato paste
 - 1 tablespoon red wine vinegar
 - 2 teaspoons caraway seeds, toasted and ground
 - 1 teaspoon cumin seeds, toasted and ground
 - 1 teaspoon paprika (smoked is best)
 - 1/4 cup extra virgin olive oil
