• 1 large leek, diced
• 2 stalks celery, diced
• 3 cloves garlic, minced
• 2 bay leaves
• 1 teaspoon red pepper flakes
• 1 teaspoon dried thyme
• 1 quart vegetable stock (plus you might need some water)
• 1/2 cup heavy cream (optional)
