
Short Rib Ragu
Ingredients (24)
- 4-5 pounds beef short ribs
- Kosher salt and pepper
- 2 Tablespoons oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 stalks celery, chopped
- 4 cloves garlic, chopped
- 2 Tablespoons tomato paste
- 1/2 bottle red wine
- 14 ounces canned tomatoes
- 1 Tablespoon Dijon mustard (optional)
- 1 ounce dried Porcini mushrooms (soaked for an hour in 2 Cups of hot water)
- 1 Tablespoon fresh thyme (or 1 Teaspoon dried)
- 1 Tablespoon fresh oregano (or 1 Teaspoon dried)
- 1 large rosemary sprig
- 2 bay leaves
- Water or stock
- Egg noodles or polenta (for serving)*
- Gremolata:
- 1 large clove garlic, minced
- 1 large lemon, zest only
- 1/4 Cup flat leaf parsley, minced
- 1/2 Teaspoon salt
- 1 Teaspoon olive oil
